- Prepare and sautee Vegetables
- Onion
- Jalapeno
- Prepared Spinach
- Set vegetables aside to cool
- Make egg mixture
- 3 Eggs
- 3 extra egg whites
- 1/2 C shredded cheese
- 1/4 C bacon of shredded chicken
- 1/4 tsp garlic powder
- salt and pepper to taste
- 1/2 C cottage cheese
- Add in your vegetables
- Mix to combine and pour into non-stick oven-safe skillet
- Put 350º for 30-45 minutes
- Serve with toasted English muffins
