Jalapeno Popper Egg

  • Prepare and sautee Vegetables
    • Onion
    • Jalapeno
    • Prepared Spinach
  • Set vegetables aside to cool
  • Make egg mixture
    • 3 Eggs
    • 3 extra egg whites
    • 1/2 C shredded cheese
    • 1/4 C bacon of shredded chicken
    • 1/4 tsp garlic powder
    • salt and pepper to taste
    • 1/2 C cottage cheese
  • Add in your vegetables
  • Mix to combine and pour into non-stick oven-safe skillet
  • Put 350º for 30-45 minutes
  • Serve with toasted English muffins
