John and Rick’s Belich Potato Casserole

Also called cheese potatoes

6 to 8 cups hashbrowns
1/2 cup melted butter
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup chopped onions
One can cream of something soup
2 cups sour cream
2 cups grated cheddar cheese

Combine everything in a 3 quart casserole
Bake uncovered at 375° for about one hour or until browned and bubbly

Grandpa’s twist: use a mandolin to slice potatoes really thin.
Use one whole onion but caramelize in EVOO before mixing with other ingredients
