Get a very fresh fish such as Jack. Bright red gills, clear eyes, no fishy smell.
- Make slurry with lemon zest, ricotta, yuzo, A-1 sauce, chive and parsley.
- Prepare garnish: flower, mint, pineapple, papaya, watermelon radish
- Spread slurry on a plate
- Place garnish to the side
- Slice VERY thin slices of raw fish and shingle on top of the slurry
- Sprinkle with a bit of cayenne
