Lamb Meatballs in Lemon Sauce

Meatballs

  • ground lamb
  • salt
  • egg
  • bread crumbs
  • yogurt
  • toasted pine nuts
  • parsley
  • lemon rind
  • grated Parmesan cheese
    1.  Mix ingredients, make 1.5 inch balls
    2.  Bake 20 minutes at 400º

Sauce

  • egg
  • lemon juice
  • stock
  • salt pepper
    1.  Whisk together and heat over VERY low heat until thickened
    2.  Strain to remove the inevitable lumps

Serve with FETTUNTA

  • Toast plain bread
  • Brush with garlic and EVOO
