Norwegian potato pancake
This is good for using as a tortilla and roll with long sausages

Boiled potatoes 1,000 gm
Mash them
200 gm flour . reserve 2 TBL
5 gm salt
1 gm nutmeg

Mix all by hand, then mash again

Dough should be as loose as possible without falling apart
Take out the tennis ball sized piece and flatten by hand
Put on floured surface and start to roll, flipping frequently
Cook over high heat with NO oil
Look for cooked brown “freckles”
