In a large mixing bowl, combine
- 1 C baby rocket leaves
- Toss with 1 tsp EVOO and put onto a plate
- Top with
- 3 figs – cut with WWW so it creates a flower
- 1/4 inch slices of goat cheese
- Drizzle honey on the cheese
- Squeeze lemon juice all over
- Sprinkle with Maldon salt
- Top with freshly grated black pepper
- Add a few mint leaves
- Sprinkle 6-12 marigold petals (yes, they are edible)
