INGREDIENTS
- 1 LB fresh Brussels Sprouts
- 1 carrot (thin slices on the bias)
- 1 Vidalia onion (cut into thick slices and separated)
- 1 lime
- salt and pepper
- EVOO
STEP BY STEP
- Soak Brussels Sprouts in warm water for 10 minutes
- Meanwhile, preheat oven to 350º
- Prepare a steamer basket for a 4 minute steam
- Cut lime in half and set aside
- Trim end off Sprouts and cut in half
- Steam Sprouts and carrots together 4 minutes
- Let dry on a paper towel for another 4 minutes
- Toss very gently in 1 TBL EVOO and place on baking sheet
- Bake 10 minutes
- Turn Sprouts to the other side
- Squeeze on lime and add salt and pepper
- Bake another 5-7 minutes
- Broil until they edges begin to darken and the Sprouts become crispy
- Cool and serve
