- Cut a Vidalia or Sweet onion as thinly as possible
- Put into a bowl and cover with buttermilk
- Let soak for 1-2 hours
- Drain well
- Toss in a bowl the following:
- 2 C AP flour
- salt, cayenne, black pepper, cumin
- Take small batches of onion and toss in the flour coating well
- Sake off most of the flour
- Put into hot (165º) peanut oil till browned and crispy
- Put onto a towel or rack and sprinkle with salt while still hot
