- Select whichever pancake recipe looks best to you.
- Reduce the liquid by a couple of tablespoons to create a thick batter. Pourable, but not stiff like a bread dough
- Put Farmer John sausages on lollipop or popsicle sticks
- Pat them dry
- Bring 1-2 C canola or peanut oil up to about 360º in a heavy skillet
- Put the batter into a tall skinny glass.
- Dip the sausages into the batter
- Let drip a bit, then place into the hot oil until golden brown (about 2 minutes) rotate to brown both sides
- Let drain on a wire rack over a paper towel or newspaper
Great with a honey-mustard dipping sauce.
