Ingredients
- Misc peppers – all colors
- Onion
- Salt and pepper
- Favorite spices
- Splash red wine vinegar
Step by Step
- Clean peppers
- Put over medium to low heat
- Add garlic, dried oregano and thyme
- Olive oil to cover bottom of pan
- Simmer 45 minutes
- Fresh herbs at the very end
- Keep for up to a week in the fridge
- Serve as a side with any meat
