INGREDIENTS
- 1/2 C water
- 1/2 C ice water (last step)
- 1 tablespoon sugar
- 1-1/2 teaspoons Kosher salt
- 1/2 cup apple cider or red wine vinegar
- juice from one lime
- 1/2 tsp mustard seeds
- 1/2 tsp corriander seeds
- 1 tsp black peppercorns
- 1 medium red onion, thinly sliced
STEP BY STEP
- Heat water in microwave for 90 seconds
- Whisk in sugar and salt creating a brine
- Add vinegar to the brine
- Slice onion into thin slivers
- Add onions to brine
- Let marinate for 1/2 hour
- Add ice water to the brine
- Place mixture in a jar and refrigerate for at least 1 day
- Pickled onions will last for two weeks stored in the refrigerator
