This is super easy, but just takes a little bit of baking time.
Cut potatoes into 1/4 inch medallions
Spray with cooking oil
Salt generously
Bake at 400° for about 30 minutes
Top with your choice of toppings to serve, or just serve with a small bowl of ketchup.
