INGREDIENTS
- 1/2 sweet or red onion
- 1 red bell pepper
- 4 cloves crushed garlic
- 1 TBL EVOO
Sautee above, then add - 2 tsp ground chili pepper (hot or mild – not black)
- 2 tsp ground cumin
- 1/2 tsp cayenne pepper
- 2 TBL cold butter
- 1 TBL flour
- Salt and pepper to taste
After cooking for a minute, add - 1 CU Broth or Bullion
- 2 tsp corn starch (might not use) – in a slurry of 1 TBL water
- Garnish – parsley, cilantro or chives
STEP BY STEP
- Sautee first ingredients
- Immediately start SLOWLY adding powdered mixture, stirring as you go
- Add all ground ingredients and butter
- Add broth to pan after butter has melted
- Bring back up to heat and simmer.
- Stir for a maximum of 10 minutes minutes, or until it thickens.
If it doesn’t thicken after 8 minutes, add corn starch slurry and stir for two more minutes - Pour over top of burrito.
- Garnish and serve
