- Put peppers, garlic and EVOO into baking dish and cook along with the meat
- Cast iron pan – medium high heat
- Sear 10 minutes per side
- Head of garlic break apart in the pan
- Add a stick of butter
- Baste meat as it cooks
- Put into oven at 425º until 130º internal temperature – about 30-45 minutes
- Rest 5 minutes
- Cut off the bone and serve with the peppers
