INGREDIENTS
- Zucchini or squash – Cut into 1/2 inch cubes
- 1 TBL Butter
- 1 TBL Olive oil
- 2 tbl Lemon juice
- 1/2 tsp dried dill
STEP BY STEP
- Heat butter in your fry pan
- Add oil – this will keep the butter from burning
- Toss chopped zucchini in salt
- Add zuchinni to hot pan
- Cook 4-6 minutes
- Add 2 tbl lemon juice near end add ½ tsp dried dill
- Serve like this as a dish, or puree in a blender and strain and serve as a side soup
