- Start with béchamel
. 2 TBL Each Flour, butter, with salt to taste - Brown over stove
. Add 1/2 C WARMED Half and Half or whole milk - Return to a simmer
- Add to a glass bowl and add 1 TBL softened buttter
- Add two egg yolks
- Add cheeses ementhal, comté, appenziller, sharfe maxx . Cut into small cubes. Use whatever cheese you have
- Heat oven to 375°
- Beat 3 egg whites to soft peaks
- Add whites just ONE of the yolks into béchamel
- Pour into greased ramekin
- Cook for 45 minutes
