Liquid: 8 Cloves, 1 star anise, lots of mustard seed, 4 white peppercorns, 3 bay leaves, 8 black peppercorns, 3 TBL sugar, 1/4 C hot water, white vinegar

Salted Herring pieces
Red Onion slivers
Carrots
Apple slivers
Repeat

Add liquid
Age at least 4 days
Keeps several months

Liquid: Big spoonful of honey in mixing bowl
1/4 C boiling water
Apple cider vinegar
Whole corriander seeds
Horseradish slices

Salted Herring pieces to start
Red Onion slivers
Apple slivers
Repeat
End with a third herring layer

Top off with vinegar
Let age at least four days
Keeps several months
