- Shred cooked chicken
- Put half into skillet to char
- Soft fry corn tortillas in hot oil
- Dip tortilla in enchilada sauce . Both sides
- Put chicken into tortilla
- 1/4 C Shredded cheese
- Mozzarella, Queso Fresca, Monterey Jack or Cotija cheese
- Put in a bit more chicken
- Roll up and line up in casserole
- Top with more enchilada sauce and cheese
- Top with some bell peppers – skin charred and removed
- Bake at 350ยบ for 20-25 minutes
- Let rest 30 minutes
- Serve individual enchiladas
