- Grate 1/2 potato and grate 1/2 onion
- Rinse in salted water to remove starch
- Squeeze water from grated potatoes
- Mix the following in separate large mixing bowl
- 1 tsp cumin
- 1 TBL Parmesan cheese
- Granulated or minced garlic (not whole)
- 1 TBL chives
- 3 TBL AP flour
- 1 egg
- Salt-and-pepper
- Jalapeño jack cheese
- scant baking powder
- Add grated potato to the spice mixture
- Cook on a medium-high griddle with 1 TBL butter and 1 TBL EVOO
- Flatten in the pan, and cook until browned around the edges
- OPTION 1: Put a plate over the top, flip, and slide back into the pan, and cook until browned
- OPTION 2: Move to baking sheet, top with cheese, and finish in the oven @ 350° for 10-15 minutes
- Top with chopped cilantro
