- Chop an onion and saute in 2 TBL butter – 3-5 minutes
- Add sour dough pieces into a lightly greased casserole
- Add 1/2 C spinach (cooked and chopped)
- Top with 1/2 C grated cheddar and 1/4 C Gruyere
- Top with onions
- Optional: Add crumbled bacon
- Combine egg mixture
- 4 eggs
- 1-1/2 C milk
- 1/2 C cream
- 1 tsp Dijon mustard
- 1/2 tsp CinnaSugar
- 1 TBL sugar
- 1/2 tsp salt
- 1 sprig thyme
- 1/2 tsp vanilla
- 1 tsp brandy
- Dump eggs over top of casserole
- Sprinkle with another 1/4 C Gruyere
- Cover with foil
- Cook now or refrigerate overnight
- If you are cooking from a cold dish, let it come up to room temperature for a half hour before putting it into a hot oven.
- Bake 30 minutes covered
- Uncover and bake an additional 3o minutes
