- Shred two chicken thighs or one breast.
- Make your Drunken Sauce
- 2 TBL soy
- 1/2 tsp corn starch
- 2 TBL Hoisin
- 1 TBL fish sauce
- 1 TBL sweet chili sauce
- 1-2 tsp sesame oil
- Spiralize an English Cucumber using a Benriner spiralizer
- Cut a Vadalia onion thinly and put into medium-hot skillet
- Meanwhile, chop yellow or red bell pepper
- Add to skillet
- Meanwhile, smash and mince a clove of garlic
- Add to skillet
- Add chicken to the skillet
- Meanwhile, halve a dozen cherry tomatoes
- Add to skillet
- Meanwhile, cut 3-6 scallions in 3/4 inch pieces
- Add to the cucumber noodles
- Toss noodles with the warm (not hot) chicken mixture
- Top with fresh basil chiffonade
