Grandpa’s Green Enchilada Sauce
INGREDIENTS
- 1 Onion . Sauteé
- 4 cloves Garlic
- 2 Poblano . Roasted
- 3 Jalapeño peppers
- 4 Tomatillos . Soak, peel, sticky, rinse
- 2 C Chicken stock
- Fresh cilantro
STEP BY STEP
- Soften onion in EVOO in a hot skillet
- Add garlic, poblano, jalapeño, and tomatillos
- In 5 minutes add chicken stock
- Simmer 15 more minutes
- Remove from heat and add fresh cilantro
- Puree in food processor or blender
Grandpa’s Hot Green Enchilada Sauce
- Use the recipe above for Grandpa’s Green Sauce
- Add 2-3 habañero peppers just before Step 4
Grandpa’s Tomatillo Sauce
- Use the recipe above for Grandpa’s Green Sauce BUT
- Remove 2 jalapeño peppers and 1 more poblano pepper
- Add 2 more tomatillos at Step 2
