Urban farm mashed sweet potatoes
Grab as many sweet potatoes as you can
Peel them . using peel your compost
Cut peeled sweet potatoes into 1 inch or smaller cubes
Rinse and steam them for 30 minutes
mix with one stick of melted butter, and sour cream and horseradish to taste
squish initially with a potato masher
put squished potatoes into kitchen aid with
beater attachment
turn on mixer and add buttermilk until creamy
season to taste with grated Parmesan cheese, salt and white pepper
