INGREDIENTS
- 2 eggs – separated
- 1 small onion – diced
- EVOO
- 1 CU shredded cheddar/mozzarella cheese
- 1 tomato (diced) or 1 can San Marzano tomatoes – crushed
- 1 TBL chives
- 1 tsp oregano
- 1 tsp sugar
STEP BY STEP
- Saute onions IN EVOO
- Beat egg whites to medium peaks
- Fold veggies into egg whites
- ( Add options below if desired )
- Combine everything ( except cheese ) in casserole dish with all other ingredients
- Top with shredded cheese
- Bake @ 350º for 40 minutes
- Let cool 5 minutes before serving
OPTIONS: Add mushrooms, black olives, or artichokes
